i,m doing my second brisket tonight, and i,m still having a hard time figuring out why you need to put in wrapping and put it ih a ice chest. will be having 4 for dinner and hope to have plenty for the rest of the week. the brisket is 11lbs. any info on freezing or is it best just to put it in the fridge?

When BBQ is done earlier than your planned dinner time, wrapping it in x-heavy foil and then in towels and placing it in a dry ice chest will keep it hot and preserve moisture. Last Thanksgiving I did this with a whole turkey, and, when it was unwrapped over 90 minutes later, it was still steaming and too hot to touch.
 
Wrapping roasts and large pieces of meat and allowing them to set gives the juices time to distribute through the muscle tissue. The towels or ice chest will keep food hot for several hours, in case you cooked it ahead of time. As far as freezing, i like to make small packages (enough for 1 meal) and freeze those. They always reheat just fine. Good luck
