My past weekend story: (with reservations to tell it)
Butts on sale at all local grocery chains past weekend; .99lb.
Bought 2, 7 lbers.
Rubbed at 1 p.m. Sat.
Fired smoker 7:30 pm
full ring of SAMS choice (out of Rancher)
4 chunks hickory, Min Method
placed center part on charcoal
Placed water pan and bottom grate.
Heard a noise when putting water pan in, but it was smoking so much i could not see inside
did not know what it was.
Filled water pan.
Put top grate on, placed butts on top grate,
installed ET73.
Temp was 45* food probe in meat.
Therm in top of lid, through vent.
Temp came up to about 200.
Slowly climbed to 220.
Let it go till about 11 p.m. decided to refill water pan before going to bed with ET73 by my side on table.
I use a 2 liter coke bottle to fill pan at lid
I had my flashlight to see pan. When i opened the lid, THe frig... pan was sitting on the coals in the char basket. my wife helped me get the butts off the grate and i reached in and put the water pan back on hinges. When i started to fill it i saw water running out the bottom of the water pan. I thought it had burned a hole in it.
Water kept dripping and putting out coals in center of basket. It finally stopped, and i filled it up again.
thought everything was fine. Went to bed and at 3 a.m. my 73 starting beeping. checked it through the side door and barely had a fire in basket. So, i fired up another chimney of Sams
and it blew like a giant blow torch when it all lit all coals, damn nearly burned my hands and arms. I used a short tong and put each piece in the basket. When i would put a piece in it would "sizzle" like water was in the basket.
By this time the wind was at about 20 mph and turning "cold".
I said to myself, self, put the d... thing in the oven. The internal temp of meat was only 134
degrees in 7 hours.I foiled it and inserted the ET probe in the oven at 240 and went back to bed
Set alarm to go off at 190*. 8:30 am it alarmed
pulled meat and put in cooler with newspaper and towels. Ate at 12 noon. Grandaughter said,
Papaw you just get better everytime you cook.
I guess it is hard to mess up a butt!
But, Butt, I WILL go back to clay saucer.

I had a similar thing happen back when I used water. There was a small hole in the pan just big enough to create havoc! I've used sand for years now and recently switched to using two firebricks in place of the sand. No worries now!
 
I am so thankful to this people on this site for not having to use water(I use Piedmont). Thank you, thank you, thank you.
