I Was Going to Smoke Today, Bring the Wind On!

Local store had spares on sale for .98 cents/lb for 4.5 and up, so I grabed a couple.
Was going to be in the 80's this weekend, so I was ready to smoke!

Didn't count on the wind being 20-30 mph, with gusts above 30 tho. So, I adapted, and used my shed for a windbreak:

My shed sits away from the house a little, but it worked like a charm. It's also by my fire pit, so I could clean up the sticks and such in the yard while we are cooking. Neighbors must have thought I was nuts, tho, having a fire when it's 80+ out!

Cut them up St Louis style and put them on:

Pulled them off, love all the extras you get cutting up whole slabs. Ate the little pieces while cooking, had huge hunks of tips:

Was a little worried, one rack didn't pull back from the bone much, but passed the tear test, so I knew they would be done, and boy, were they good! Tried different rubs, and wanted my wife to tell me which she liked better. She kept changing her mind, couldn't tell which she like best!:

Pulled the tips, and put them into a pan. What does everyone do with their tips? I was just going to sauce them, and snack away!
 
Looks great! I'm in Ohio and it was windy here too. When I do spares I usually pull or chop up the trimmings for use in BBQ beans.

Me too!!! Either BBQ beans, bean soup or slow cooked crock pot green beans.
