I have to smoke 16 racks of trimmed spares(136 lb) tonight for an office function tomorow at 11:30am. I normally do spares at 275-300 and I'm done in 6 hours. I'm thinking of putting them on at midnight at 225. How long do you they will take? I wanna sleep through the night and I plan using the auber for insurance. I would like to have them off the smoker by 9:30am. Any thoughts or recommendations?
 
I don't think you will add that much extra time. Maybe 45 min because of the mass to get up to temp, but once there the cook should be be the same
 
I know. I was hoping there was another strategy. I just finished 5 butts total weight 43 lbs in 9 hours at 275 and foiled the last 2 hours. I guess I will have to throw them on at 1am to get me to 8am.
 
It went well, smoked them at 200 to 220, they were done in 7 to 8 hours. I have two 6 rib rack holders. What I do is place 6 racks all bone side or the side that pulls back up facing up. They are all going to bend, like a crescent, once in the rib rack. So I place them where they all bend in the same direction. When doing this they do not touch(if they touc it prevents bark formation and smoke does not penetrate in these areas). I push the rib rack as far back as I can and then I place another rack bone side up all the way in the front leaning up against the rack. So I have 6 in the rack one outside all the way in the front and for the last rack I lay it across the top of the rack perpendicular to the ones below. I do this on both levels, there is more then enough space. If you do this make sure to put the meatier racks on the ouside of the rack and lighter racks in the middle, they will cook more evenly. I'm sure I could get 18 if i needed by squeezing a rack on the back in each level. I would not recommend using a high heat cook strategy with this as the ribs on the outside will burn due to the heat flowing up the side to the top. I have done high heat before but I have to foil the tips of the ribs once the bark is formed to protect them them from burning. I took some pictures. I will post them when I get a chance.
 
The picture shows the rib rack holding 6 ribs and is as far left possible as it can be. This creates a space on the opposite end to accommodate a 7th rack. Just make sure they are all leaning in the same direct bone side up. The 7th rack will lean again the rib rack frame. You will note that there is a light colored area on top of the ribs. This is due to the the 8th rack of ribs being laid across the top. You can do this on each level. I'm sure you can lay another one across the top and fit 9 on each level and possibly 10 on each level if you can squeeze one in on the left most side. When doing this make sure that the meatier ribs are on the outside as they will be getting hit by the heat flowing up the side of the wsm whereas the lighter racks are protected in the middle alowing them to cook more evenly. I would suggest cooking them low and slow. You can tell by looking at the pictures that the ends of the ribs did not burn. I wonder if I am on to something. If you have any question please ask. This is the other Weber rib rack. Two of these will fit end to end by overlapping the base. Put two on top, two on the bottom, and the rest will be obvious. You can pack a whole lotta ribs in the 22 inch WSM.
 
Thanks Richard, who makes that rib rack ? I've seen the Weber in Brett's post and I have a rachlen, but I think it's only 4. For me, anything over 3 or 4 racks and I am probably breaking out the lang. It's an easy cook for ribs. Overnighters, not so much.
