I tried a 6 lb brisket in my charbroil offset smoker, and after 8 hours in the smoker at 200" the internal temp was only 135 so I put it in my crock pot for 8 hrs and finally got it tender. I read that no one had this problem with a wsm 18 or 22 smoker. I wonder what went wrong please help. I aslo plan to get a 22.5 wsm smoker soon.
