Had planned on cooking a brisket for mothers day lunch, but it's raining all day today.
Rain is supposed to stop easily morning hours Sunday.
I'd like to put my 13/lb whole brisket on at 7:00AM & serve @ 7M Sunday.
Recs on temp & when you would pan or foil.
I would put on at 7am and cook @ 250-270, foil when 160-165. That should be a 8-10ish hour cook easily. Do go by internal temps when using foil just feel. I foil all briskets no matter what cook temp, they benefit from it as far as even doness throughout the flat tip to the point. Be sure to tent for 20 min before foiling and holding to stop the cooking, if necessary.
