Huli Huli & Kalua Pig Roast

Hi all!

Joe Abad is a member here and does traditional Hawaiian Kalua Pork in an Imu and Hulu Huli roasted Hogs on his homemade spits.
I got a chance to hang out with his family as they cooked for a Charity Golf Tournament sponsored by the Tulalip Casino.

I took a ton of pics and pretty much took the whole cook from snout to tail!

Wow thanks for sharing Brian! Great work Joe! That looks wicked, I would love to check it out some time. Besides there is nothing better than kalua pig!

Probably a stupid question but what was the whole process? I went through the slides which were awesome, just kind of wondering what all was done, that kind of thing? If you don't mind of course! On a completly different and unrelated subjuect you're right the Performer does change your life......

Stuffing the volcanic rocks in the cavities for the Imu pigs was something I had not seen or heard of.
The slow turning of the spits and the way they moved coals around under the hogs. Everyone knew what they were doing and what needed tending.
It was fun to be part of all that. Sea Salt and a little Lemongrass was the seasoning. Alder logs fueled the fire to heat the stones, Banana leaves normally would be used, but Joe had to improvise and use cabbage when his supplier didn't deliver, briqs and small splits of Alder were the fuel for the spits, and just watching the skins turn from pink to mahogany and then sample some cracklings from time to time...I suppose thats the process I meant.

Good to hear of the life changing experience!
