My name is Chris, which is apparently a good name to have around here. I’m originally from Seattle, but thanks to the Army and my later civilian career I’ve lived a few places. I spent five years living in San Antonio before finally coming home to the great Pacific Northwest.

I have been grilling on a Weber kettle for a bunch of years, but I’ve always wanted to try smoking some proper barbecue. I fell madly in love with brisket when I lived in Texas, and replicating that mouth-watering goodness is my eventual goal. I thought about doing a smoking setup with my kettle, but then I learned about the WSM and I was sold. I got an 18-incher as an early Fathers’ Day present and just now fired it up for the first time. I got a dog-eared old copy of Gary Wiviott’s Low & Slow and I figured it’s as good a place as any to start. So, a couple of hours after I write this I might possibly be enjoying some tasty smoked chicken. Wish me luck!
 
Welcome aboard Chris, glad you joined us. Many, many members have WSM's with a wealth of knowledge. I can confirm personally that you purchased a heck of a cooking machine! Enjoy and don't be afraid to ask questions. Oh, and take pics, we love pics. 😀

Colin is correct. YES!!!!!! They do love pictures here. I still don't have that part done right. Always forget them or not clear enough, too small, and so on. lol
 
Hi Chris - Welcome to the forum and congrats on the new equipment - it's a really versatile cooker and fun to use. We have lots of Texas style bbq fans in the forum, including me. I haven't been to TX in quite a while and I'm ready to go back!
 
Welcome Chris from a another Washingtonian. I have a love/hate relationship with beef briskets, they sometimes end up too tough and sometimes like pulled beef, but when it works it's magic.
