Greetings, I'm new to the forum.
I plan on smoking a 4.5 lb. brisket deckel along with two turkey breasts (6.5 lb. each) on an 18.5" WSM. I've smoked one brisket so far and while it came out good and smokey, it was tough. It was a small flat - 2.8 lbs. and I think that was part of the problem.
The deckel I have planned is fattier and thicker. Any advice on temp (high vs. low temp.) and what I should be planning on time wise?
