How to make Applewood chunks smoke longer

1999 Genesis 1100, open chunks only smoke about 8 minutes then slowly burn to a char with out smoking. Some say soak them, cover with foil with punched holes, put in a box, once flames start then what ? Put up on warming rack to be in less heat to smolder ? Or ?
 
I never left open wood on my gas grills. Makes a huge mess and wood ash is corrosive. Always in a smoker box or foil packet. And always very tiny slit or hole so very limited air meaning less combustion
 
Fine, but using a foil packet and it starts to smoke does it stay over a burner or get moved to a lesser heat area to not burn too quickly? Holes on top or bottom. Tks.

I typically would place over the XOver tube/burner. Since it's always working no matter how low you set the heat
 
I use a metal fire/smoke box over the back burner on my Genesis. The limited number of holes restricts air flow and prevents the wood from actually flaming. At least that’s what works for me
