I have volunteered to provide BBQ for a graduation party for a friend that is graduating from college. There will be about 60 people there, I was planning to prepare two briskets (about 10 pounds each ) and 4 pork butts. Do you think this is enough meat there will be the standard side dishes.
thanks
Doug

Figure 50% shrinkage from pre-cooked weight. That will yield you about 25 pounds cooked meat (2x10 lb brisket + 4x7.5 lb pork butt = 50 lb pre-cooked / 2 = 25 lb net cooked). Afternoon tea, figure 1/4 lb per person; college football team, figure 1/2 lb per person. Split the difference and say 1/3 lb per person, you can serve 75 people. Set up the buffet line so that meat is taken last, and you can make it go farther.
