How much do you charge for smoking?

I've got people at work asking me to smoke them different things now, and I think I'm practically giving the stuff away. What's the normal 'good guy' discount for meats? I want to make money, but I don't want to gouge the people.

I sold baby backs for $10/rack
I sold a 5lb butterball roasting chicken for $10
I sold chopped beef for $6/lb
I sold pulled pork for $5/lb

Is that way too low or ??
 
What I would do is find out what the local going price is for these things you mentioned.

Then charge exactly the same or more.

The reasoning you give them is that it is custom and you put more love and care in them than a commercial guy would.

NEVER undersell yourself in ANYTHING!!!
 
Rule of thumb take all your cost (meat, fuel, spices, ect.) and X by 3.5 to 4 and that's the price.
With ribs that rule needs to modified cause the cost gets to high, Ribs just aren't a good money maker.

So if I understand you correctly, my pork butts are 84 cents per pound. 5lb of charcoal to do those butts is $2.50 and wood is roughly $.50. That's $28 for a 6lb pork butt that cost me $5. Not a bad profit!!!
