How many racks on the rack?

I plan on smoking 4 racks of spares, trimmed KC style this weekend. Can I fit 4 rolled racks on the WSM? I also plan on cooking the skirt and tips at the same time. Will it all fit?

Also, I plan on about 6 hours cooking time. Sound about right?

Yes. Yes. And maybe: if you are foiling then yes, perhaps 6 hours give or take. If you are not foiling then it might very well be longer (7-8 hours). Both depend on rib size/thickness/original weight and cook temp.

Time is only a guide as you know; cook ribs till 'done'. Use a probe or toothpick (or whatever) inserted between the bones (it will go in smoothly) to test for done.
