How many chicken thighs can I fit in WSM?

I need to do about 15 chicken thighs as I'm having some people over, and not sure how I'm going to fit them all on the top rack. (18.5 model). I was not planning to use the bottom rack as I'm heard there are food safety issues with chicken dripping on to another meat (even if it's chicken). Do you think 15 could fit? I did 6 the other day and it took a good bit of room. Maybe if I go vertical with them? Would anyone recommend putitng them in a rib rack or something like that?
 
You can use the bottom rack, it will be fine since you're taking all the chicken to safe temperatures including the chicken on the bottom rack.
 
Bryan, all depends on the size of the thigh. I do 15 in comp on top rack , BUT, they are trimmed quite a bit. Cook on both racks, no prob.

Okay, so just to confirm, there are no health concerns with the top rack chicken dripping on to the bottom rack chicken?

Bryan as long as the chicken on the bottom rack is cooked to safe temperatures you have no worries.
 
one piece of advice, don't cook fish over chicken, even if it's safe

What kind of racks are you referring to that could do this? Could you possibly link me to them? The possibility of doing that many thighs at once is intriguing.

I cook on both racks all the time as does just about everyone else on hear from what I can tell; this includes chkn over chkn, and more specifically, thighs over thighs.

Generally speaking I think people are WAY too concerned with safety when it comes to chicken. It's not a poisonous material. It just needs some time and temp in the cooker and you're good to go.

I can't recall the number, but the first time I bought the costco pack of skinless thighs I cooked them all at once on the WSM. It had to be something like 30 thighs or more.

Good luck. I"m sure it will turn out good. The fat in the thighs makes them very forgiving.

Bryan, the link below is to the page discussing adding racks. I use the 2nd photo rack. With a 22, 10 per rack is doable. With an 18 maybe 6-8 depending on the size of the thighs.

On my 18 I did 13 / rack on a couple test cooks awhile back. They were not trimmed.

I picked up the BGE rack extender for my 18 WSM for ribs. It would work well if you wanted use it for thighs. Just make sure you have some welding / heat safe gloves to grab it with when you want remove it for flipping the thighs, if you want to flip. It was $19 from ACE hardware..
