I smoked some salmon fillets and had a bunch of it leftover, not that it tasted bad, but we couldn't eat it all in one sitting... I divided into portions and vacuum sealed it, how long should it keep in the fridge and when should it go in the freezer?

Not sure exactly how long it will keep, but if you want to guarrentee they don't spoil, just send them to me

Hey Lori,

Your salmon should last about a week in the fridge. It may go to two weeks, but in the second week it may become a little icky.

Whatever isn't gone by the end of the first week should go in the freezer, but it'll lose it's texture after a month or two. If during the first week you know you won't be finishing it off, better to just throw it in the freezer.

I agree with Kevin on this with about a week for the fridge, but still better to get it in the freezer ASAP if you are not going to eat it for a few days I think the taste come out better the sooner they go in....
