You to cut up a spare into St louis style? I timed myself just now and I may be the world record holder. Open package, cut into st louis ribs, remove membrane, sprinkle rub, place rack of ribs into smoker, light a chimney of lump, come back into the house. 6 minutes total. Where is Guiness World Book of Records when you need them.
Actual butcher time was at 2 minutes. I have a brisket flat already done and in the cooler. I am lightning fast today!

yeah once you get the hang of trimming ribs it doesnt take that long.unless you get a rack that has one of those impossible to remove membrane on them.
 
Paul, Im fast, I can get there in a few minutes.
The trick is watch the video Chris made a few times and get a super sharp knife. I remember cutting up my first spares. It was interesting.
