I just bought a brisket yesterday at the grocery. It is in cryovac. If I'm cooking it this next weekend, can I leave it in the fridge or do I need to freeze?

Yea; it will be fine in the fridge for a week. Heck, if you froze it now you would have to take it out a day later to thaw it! I have even heard of folks leaving it in the fridge up to 4 weeks! Personaly I would feel comfortable keeping a brisket in the fridge up to 2 weeks if it was in cryovac and my fridge temp is under 40(which it is). You do have a fridge thermometer, don't you? I keep a therm in both my fridges and my freezers

Don't forget to look at the "Sell by" date. The briskets in cryovac last a long time. Figure you're safe for at least a few days past the date on the package.
