I just bought a slab of pork chops from Safeway for 99 cents a pound. Had them cut it into 3 large roasts. Total 17 lbs. 17 bucks. I'm going to cook one roast about 9# slow to about 195 and pull it. Freeze most of it in packs of seal a meal for later. What do you think?
 
I think you might have a pork loin. If you cook that to 195, it will be dry. That cut is too lean for long cooks. It is great grilled.
 
That pork will never come out the way you want it you should smoke it to 160 then wrap in foil and let it rest for 30 min to 45min then slice it up thin with some bbq sauce
