Hi, my name is Tony and I live near Palm Springs. I’m not new to smoking but have learned a lot from lurking on this site for a couple of weeks. My first smoker was a Coleman single grate that I bought in 1975. I later upgraded to a Brinkmann double grate. Had a lot of success with these simple water smokers. Later on I bought a Cookshack which I used for about 20 years. Gave that to my grandson.
Right now I have a WSJ, a Traeger, a built in Alfresco gas grill, a separate built in Alfresco char broiler and a newly purchased WSM 18. My first smoke on the WSM was a turkey with a foiled water pan and no water, cooked at 300. It really turned out well thanks to tips picked up on this site. My son just gave me a Pitmaster IQ which I will be giving a test run soon. I installed a gasket kit and wired the charcoal ring to a criss-crossed charcoal grate for now. And also have a Firedial on it way. Not sure if I need any more mods.
Anyway I am very happy to have found this site and am enjoying it immensely.
