Anyone ever see HM do something like this with a probe? I smoked a prime rib tonight and you can see as my smoker neared the 200 degrees setpoint the power dropped off. But during that ramp up period the probe in the prime rib meat looked like it was quickly rising and then it fell back down to starting temperature before making it's official climb to temp.
FYI, Prime Rib cooked to 128 degrees IT (then reverse seared in oven at 500 for 4-6 mins) at 200 degree setpoint creates the best damn Christmas dinner I've ever had!
