High Temp Brisket --thanks! and a question

Hello Everyone,
I did my first high heat brisket today. It was awesome -- the suggestions on this site were invaluable.

Every summer I do a brisket party where I smoke 45 pounds of brisket. Last summer I posted the details with pics ( http://tvwbb.com/eve/forums/a/...441095026#8441095026 ).

Here's my question: Can I do three 15-pound briskets at once on my WSM 22.5 with the high heat method? I'm concerned about building up to and maintaining temperature, and about having to move the briskets from grate to grate in order to maintain consistency among the three briskets.

Thanks,

Gil

Congrats on a successful high heat brisket, it's how I do mine as well.

I don't have a 22.5" but I've one two 17 lbers on my 18.5" without any trouble. I wouldn't worry about rotating the briskets since the heat is going to be high, the temp difference will not be that far different between the racks. One they are foiled, you could put the one on the bottom rack on the top rack, or just stack them up, which is what I usually do.

wow. how did you fit the 17 pounders on the 18.5? That sounds like a tight fit.

did you need more charcoal with more meat, or did you not see any difference?

thanks,

gil

On the top rack, I wedged it betweem the handles, on the bottom I kind of humped it up, pierced through it with two skewers, and those were then stuck through the grate to maintain the "hump". It worked quite well, I was proud of my ingenuity.

As for charcoal quantity, I didn't use any more/less for the the two versus doing one.
