High speed butt!

I picked up 4 butts this week, on sale for 99c pound. I put buckboard bacon rub on 2 and was gonna smoke the other two. I got called in to work and had to change my cook plans. I somewhat followed the quick cook instructions. I used the mustard slathered rub recipe, minus the mustard. Put the butts on and ran it about 250 at the grate. Took them off after 4 hours, they were around 162 internal. Double foiled them and put them in the oven at 280. Two hours later I pulled them at about 196. They are great! Not as much bark, which was expected, but some really good eats. It's nice to know the WSM can produce great food even when you don't have alot of time to spend cooking!
 
Greg, I use the prepackaged rub, from Hi Mountain Seasonings. It's really good stuff. The seasoning comes with color instructions. Once you try it store bought bacon just isn't the same!
