HH Brisket - Performer or WSM


 
I've had good luck doing briskets on the kettle, for me it's easier to get up to the higher temps with the kettle but I also have to keep a closer eye the cooker than with WSM.
 
I use inch and quarter fire bricks and bank the coals to one side then foil the side where the brisket lays. there is plenty info in the grilling section on this site, I have a 10 pounder on the wsm now HH.
 
I like the Kettle if it not a huge packer. It is much easier to keep temps consistant at 350ish unless you have extra vents on the WSM or have experience cracking the door or lid. I would use 1/3rd of the cc grate with unlit and put 8-10 lit on top. Be sure to rotate a couple times if going offset/indirect. You can do coals on both side as KK notes if you wish.
 
Me too, I should of clarified. I don't rotate until foiled, way to messy otherwise. I turn 180 when I foil and once again after 1-1.5 hrs later depending on variables. As long as it isn't huge I like coals on both sides as well.
