Hey from S.E. Texas, How y'all doin'?


 
Hey y'all, I'm Mike from S.E. Texas. I've got a couple of Weber kettles that I've had for 15 years or so that are still great grills. I purchased my very first WSM about a month and half ago. I've never had a smoker before but I've really been having a ball with this one. It took me a couple of smokes before I figured out how to control the temp but I think I'm getting a handle on it. My first smoke was a turkey. I was gonna try and cook it at about 350, but I discovered that when you put water in the pan that ain't gonna happen. So I ended up smokin' it at about 250 and it came out awesome in spite of myself. Since then I've smoked ribs, brisket and lamb and they have all come out very nice. The cooking tips on the virtual bullet site have been an enormous help and I am extremely grateful to the folks who have shared the experience and expertise.

This is my first post on the forum and with Thanksgiving just around the corner I'm hoping to get some tips on how to smoke a Ham and Turkey at the same time. I got some hungry kin folk. But this weekend I intend to try smokin a nice fat salmon filet. Any suggestions would be greatly appreciated.
