I am a newbie and am using the WSM for the first time today. I have chicken thighs/legs and BB ribs on the top shelf. They have cooked for 4.5 hours. The internal temp of the chicken has hit 172, but I don't know if I can get it any higher - it is 0 degrees outside right now! Is this safe? Please help.
 
You should be done by now or real close. Chicken thighs pulled off the cooker at 175? and let them set a little bit covered in foil will reach high enough temps.
