Help with Beef Plate Skirt Steak

I have some of this in the fridge and at first I thought tacos, but on my way home tonight I grabbed some feta & spinich....thought I might roll some up and make pinwheels.

Any suggestions on the spices? Cook on the Genesis or Charcoal? Dill? Black Pepper?

....should I pound the meat flatter?

I thought I'd throw in some of my cherry tomatoes too, thought about some julienned cucumbers but I don't have any cukes. If you have any good ideas I'd like to hear.
