I suggest 250F.
With foil or not?
IMO, i would wrapp after some hours to speed up the cook.
Totally between 10-13 hours if wrapped.
Welcome Mark. I was just in Wisconsin last weekend. Wife and I took a trip to Milwaukee and Chicago. Weather wS about 20 degrees cooler than where were from. Looking forward to seeing what you cook up.
