Hey Everyone,
I've Been Smoking meat for about two years on a cheapo brinkman(?) water smoker and with it finally wearing out I justified an 18.5" WSM purchase to the wife. I've gotten a little seasoning on it and done a ten pound bag of Chicken Leg Quarters that went beautifully. No brine, but they came out great anyway. It's amazing how different and more pleasant smoking on quality equipment is.
Looking forward to posting some photos of cooks with recipes up here.
