Hi All, first time posting on the board. My wife gave me an early Christmas present in the form of an 18.5" WSM that I can't wait to fire up.

Any suggestions on what to start with in breaking this guy in?

Looking forward to many hours browsing the board!
 
pork butt ! in my opinion , the very best entry level true BBQ item. chicken is also good.... especially for the first few just to season the pit. a big ol roast chicken is one of the best things you can cook...

You will love that WSM it is a joy to cook on.

Pork butts as said before. The biggest hint is when you do a butt when you fill the ring with charcoal and you think you put all you can put in put more in. Lots of info here Matt enjoy.
 
Not a Canuck Bob....from ND originally but live in MN now.

I'm excited to take my new WSM for a spin this weekend, thanks for the suggestions so far!
