Hello from Texas

Want to say hello on my first post before I dive in. I have been reading the forum for a couple of days now. Long time smoker and even longer time Weber griller. I just retired my old faithful GOSM Big Block smoker and bought a WSM 18-1/2". That is how I found this forum.
The girls are gone and it is just my wife and I now so size wise the WSM is perfect. I am an engineer at Nike Golf in Long Term Research and that is what brought us to Texas. We hailed in Ohio before coming down but got my love for smoking from the many trips we made to the Carolinas initially. It's all great smoking styles across several states that I have been.

My first smoke on my new WSM was a first time recipe for me too that just looked so good I had to give it whirl, it was a 2 pound buttermilk and jalapeno meatloaf. The grill got a little hot on me so I had to delay putting the meat on but 40 min later I was off and smoking. The temp stayed right to meat temp completion and to get some feel for how long I let it keep going and 7 hours later I left to go play golf and it was still at 230º.
 
Welcome aboard and enjoy the WSM. When you can, post pictures of your cooks. Makes everyone happy and we get inspired.
 
I did not see a manage attachments when I did the post so I will have to send some of these pictures then to Photobucket then I guess. Most forums I follow have a simple manage attachments method to upload them.
 
Hey there, Ray! A big welcome to Texas (not sure how long you've been here, buuut, welcome anyway :) ) and to the forum, from a little northeast of ya in McKinney. Enjoy, post pics, and let us know how everything's workin' out for ya on the cooks. By the way, if you haven't made the pilgrimage down to Austin and Lockhart and the surrounding area for some of the best barbecue you'll ever have, that one might be a great weekend trip :)
