Hello guys! This is Derek from South Western Virginia. Just wanted to let everyone know that I appreciate all the helpful tips that have been posted on the site. I just bought a 22.5 WSM of a friend that moved and didn't need it anymore. My first cook was 2 beer can chickens they turned out alright. Next was spare ribs they were pretty good just a little tough. The next weekend I went back to 2 beer can chickens they turned out perfect, once I figured out how to control the WSM I have done more Ribs, Meatloaf, Corned Beef brisket, bologna and all were good and had no complaints with the guests. I am going to try a Pork Butt this weekend if it doesn't snow.
