Glad I found this site as I am a newbie to smoking/ grilling. I watched a few BBQ Pitmaster shows last Fall which motivated me to start smoking ribs. I bought a WSM 22.5 and the first two slabs came out great. After that, it was a deep drop downhill. I could not get the temps over 175 each time I tried smoking again. The first hour would be great at 225-250 and then bam! I had to eventually finish them on the grill or oven. I gave up then but decided to give it another go last week and I just found this site. I found out here that I need a bigger fire to start off with. I was previously using two chimneys at about 2/3 full each. Then every hour I added a few pieces of charcoal and wood. Well that looks like my problem,I.e, way too small of a fire and I learned the Minion and Snake methods here on this site. I am glad I found this site and will be using the minion fire method this weekend for two slabs of ribs. Oh and the stock thermometer fogged out so I need a good smoker temp thermometer ... Any suggestions would be appreciated...thanks
 
Welcome to the forums Al! As you've already found out, this place and all of the great people here are a wealth of information!

As far as the thermometer, I would contact Weber - their Customer Service is terrific!
