Ian here from Ontario, Canada. Just got the 22.5 WSM. First cook is today with some side ribs. I've been using an electric Cookshack for the past few years and now making the jump to charcoal. Should be fun!!
Thanks all. No pics from the first smoke but turned out very well. Temperature was much easier to regulate then I had feared. Ended up underestimating the amount of charcoal for the entire smoke so I had to add some 3/4 of the way through which wasn't a big deal. Ribs looked beautiful with a nice smoke ring. Flavor was one of the best I've had. Far better then the electric and I thought that was great. When I have some time I can't wait to do a brisket. I'll have to post some pics of that. Ribs and chicken this weekend. This thing is going to put 20 lbs on me!!
