Hello from southern Missouri! I am new to this website/forum but am excited to be here. I have been grilling/smoking on a Weber 22.5" Kettle the last 3-4 years and recently purchased a (very) used 18.5" WSM. On the kettle I've grilled the standard fare, steaks/ burgers etc and I've smoked several portions of beef ribs which turned out delicious. I'm still working on figuring out the right proportions on the rub though. 1st round was too peppery - 2nd round was light all around...idk delicious trial and error though!
