Recently acquired a 18.5 after years of using my GMG Davy Crockett. I like my pellet smoker and will continue to use it, but wanted to broaden my horizons and add some capacity for larger groups without breaking the bank on a larger pellet smoker. I have found so much great info on this site that I wanted to join the group. Today will be my 3rd cook on the WSM and I plan to follow the basic rib recipe. The first two cooks were a pork tenderloin, and the some pork belly and they turned out pretty good.

Looked at the pictures of Palm Harbor, looks like a very nice place to be,
 
I cooked my first beer can chicken on my WSM and it came out pretty darn good. Followed recipe on the VWB site. I did brine the bird for few hours before the cook. Like the skin more crispy but the meat was excellent per the wife so I consider ot a success. Sand in water pan held 250-275 for about 4 hours.
