Got a WSM 22 this year. I 've been smoking on Weber kettles since 1993 but wanted more capacity and more hands-off. So far the WSM 22 fits the bill with no mods, but I am interested in a rib hanger maybe. I can do 6 racks just fine as-is. Looking forward to discussions here.

I have added the gate way rib hanging rack to my 22" WSM. I've never done more than a 3 racks at a time (apparently I need more friends). I think you can get 8 to 10 racks in there by hanging them but it would be tight. I also added a fire dial to my hanging set up as insurance against grease fires. The link at the bottom of my response here will take to to one of my older posts. Note - I had to find a way to lower the fire dial so the ribs could hang all the way.... the fire dial normally sits where the top of the water pan is, which doesn't allow room to hang ribs. I installed some chains to hang the fire dial an inch or two above the charcoal ring.... just recently I noticed that the water pan will still fit with the fire dial installed this way, which is kinda nice because now I may not have to take the fire dial out when I want to use the water pan.

My last rib hanging cook turned out really nice (earlier this summer). I also like hanging chicken in there. The favors are a little different when hanging vs using the water pan, and running the WSM indirect per normal procedure. I'd say you get a little more "grilled" flavor by hanging because the grease drippings vaporize rather than just collecting in the pan or whatever you use to catch the drippings. I find that the color is also darker when hanging. I have not seen any "burning" of the ends that are closer to the coals, I'd say they are only slightly more well done vs the opposite end.

I prefer hanging st. louis spare ribs vs baby backs... but that's just my preference. You may prefer the opposite. Ribs do cook a little faster when you hang them as well. I try to run around 300F when hanging.

Good luck and welcome to the forum!
