Hi all and thanks for making me part of the community. Looking forward to learning some techniques and recipes and providing tips or advice when possible.
Grilling/ smoking in Buffalo, NY can be tricky with the wild weather we get. Especially as I only use charcoal. But I make the most of it and not afraid to smoke in the snow/cold. Just takes a bit longer and requires more monitoring, adjustments and time.
For the past couple (cold) months I've found it easiest to use the Slow n' Sear on my Kettle for some thighs, spatchcocked chickens and even a delicious pork butt most recently. Haven't fired up the WSM since the Christmas Brisket, itching to get some ribs or a turkey on it!
