Greetings. Doing a cook today and thought I would check in here. I just checked and I have been a member of TVWBB since 2009! But post very seldom and only get on the site now and then. I have a large Smokey Mountain which I have used and enjoy a lot. And have been running a homemade Heatermeter on it for quite a while now. Today's cook is 2 nice racks of baby backs and 2 whole chickens. Ribs on top grill, chicken on bottom grill vertical in stands. Have water in pan, and smoking at 250 and have a probe in chicken breast. Will wrap the ribs after 3 hours and check chicken temp. Plan on ribs going 1.5-2 hours wrapped then will finish un-wrapped to firm them up. A little tricky cooking two different proteins at the same time (for me) but will pull the chickens off when they are at temp and everything should be fine.
