Hello! (And WSM water pan problem)

Hello everyone. My name is Jim, and I am a novice to serious barbecue. I just purchased a WSM 22 and I am on my first cook.

I noticed that occasionally some liquid is coming out of the bottom vent. I took off the lid to check it out, and the water in the water pan is boiling. Is it normal for some of the water to boil over into the sides of the Cooker?

Thanks!
Jim

Hello Jim welcome. A lot of us run the pan foiled and dry. Not specifically because of this reason. Do a search on the forum and you will find a lot of info. But to me it sounds like you had a real hot pit And had too many lite ashed over coals.

Use a bit less water to avoid boil over.

Totally normal for the water to boil. That is the basic design for temp control.

Water and steam can never go above 212F at normal pressure. Takes a lot of heat energy to get the water to 212F and the convert it to steam. So with a large amount of water as a brake, it is hard to get the temps up too high.
