Hi, I did introduce myself a while ago but didn't get the smoker I thought I would. Well I finally bought a wsm 18'' or 47cm as we call it here in the UK.
I can't wait to use it but unfortunately here in the UK we are having awful weather with high winds and floods, so when I get the chance I will have my first try, I did read on here that they can run hot at first so I think I will try chicken first.
