Heatermeter and cold smoking

I am trying the Heatermeter today for cold smoking some cheese. Because I sealed up the WSM to be as airtight as an astronaut's boots, I have to feed air to the WSM to keep the tube of pellets going.

Anyone else use the Heatermeter for cold smokes? Any hints?

Thanks.

You shouldn't even need temp control for cold smoking. As you know, the outside temperature and cold smoking by default is well cold, no heat.

If I'm smoking cheese then I know outside its 40° then thats good, lol.

You could use the Heatermeter to warn you if your cold smoke gets above 70° and sends an alarm. If cold smoking properly that should be minimal.
