Heatermeter 4.3 - Pit probe issues

I assembled my HM 4.3 and cannot get a correct pit temp to display. As you can see from my added pics, my pit temperature shows up at an extremely high number (684 degrees) and does so no matter what probe I use or if I have no probe at all such as the pic provided (I used 3 different thermoworks probes). I had originally had a thermocoupler setup but converted it into thermister probe while trying to solve this issue, both setups gave the same results. Of note, when I apply pressure with my finger to some of the surface mounted chips in the TC area of the board the temp will drop to around 300 and then eventually disappear when I apply enough pressure, then will return to 680 something when I let go. Any help would be appreciated. I posted all sides of my boards for more info

If you're gonna go standard pit probe I think you'll have to disconnect the output of the TC amp IC from the ATMega somehow. The schematic shows pins 5 and 6 on the TC amp IC connect together and then to the Pit Probe input (pin 24) on the ATMega. You can either remove the TC amp IC, or lift those two pins, or cut the trace somewhere. Since I don't have v4.3 I can't suggest a good way to go about it on that board.
