What do you feel are the major differences between cooking with gas vs. cooking with charcoal, briquets etc. Do you think it's possible to get similar results?

Similar results? Yes. The same results? No way. For me, charcoal, specifically the TYPE of charcoal, is like an ingredient in each recipe. It can flavor the food as much as any seasoning or sauce. Also, the experience is quite different for a charcoal griller. As I say in my latest book's introduction, "every charcoal fire is like a snowflake -- one of a kind -- and part of its attraction lies in the challenge of responding to its particular way of burning." Gas is quite a different story.

I agree that the gas vs charcoal experience is very different and that can certainly contribute to your impression of the taste of the product. Weber says however, in their tests there is no significant difference in the tase using either heat source based on their testing.

I use both heat sources and enjoy both.
