Having tough time grilling steaks on Performer


 
Reverse sear is a great way to do a steak!! I will add a chunk of red oak to the coals and give it some smoke before it gets seared!!
 
I sear to finish less than tender cuts. For steaks I don't. I spin the grate.

I salt as well, ahead of time (at least an hour, often two) but do not see the point in coating heavily with salt then rinsing it off. I salt as if I were about to eat it. No rinsing. I apply rub (unsalted) just before cooking.
