ham still good ?

is my second whole ham leg cut fresh still good? Its been froze since beggining of August and isn't exactly wrapped up perfectly. a layer of buther paper, 2 layers of suran (sp?) and a taped up paper bag over that? The freezer is used often enough unfortunatly. what im saying is its been opened frequently often enough for everyday use. thanks.
 
It would be a possible quality issue. If the wrapping isn't good freezer burn is a possibility but you should be able to detect that either when you pull it out of the freezer or when it thaws.
 
i can tell its freezer burned in several spots, but then again i guess its no worse then walking by the frozen seafood section in supermarkets if that helps you with knowing how much. this will be done like the last ham you helped me with, brined/cured and smoked. by the way what will the freezer burn exactly do to the ham in a process like this? flavor... texture... both? thanks. ill check back in about an hour.
 
If the freezer burn is light you might detect off odors and then off flavors after cooking; then again you might not. If the burn is more substantial the likelihood of off flavors increases quite a bit. If burned fairly substantially then dryness is also likely, within and around the burned part.
