It seems J and Bill are the closest. The are in fact beef quesadillas.
I cooked a 3.25 lb chuck roast for 10 hours @ 235 avg., let is rest, foiled, for 2 hours and pulled it.
The next day I chopped it up and added portabella mushrooms and shallots. I sauteed the veggies then added the beef and some AJ.
Assembled and ate.
Was very good.
