Bought some ground chuck at the store for the first time to make some burgers, anyone have any good simple recipes to make some good burgers? As far as mixing into the meat before forming some patties.
 
No set recipe but when I'm in the mood I may add Worcestershire sauce or any of the following besides salt and pepper. BBQ sauce, pickled jalapeno juice, ketchup, Sriracha, or your favorite hot sauce. If I remember I am going to try hoisin and soy sauce, then top the finished burger with kimchi. I'm kind of strange that way.
 
CHill's hamburger rub #3:

per pound of hamburger,

1/2 tsp salt
1/2 tsp pepper
1/2 tsp onion powder
1/2 tsp chili powder
1/4 tsp celery seed
1/8 tsp ground cardamom seed (or other sweetish aromatic, like garam masala)
1/8 tsp cayenne or red pepper flakes

mix rub into meat with yellow mustard if needed, form into patties, let sit while coals get started, grill and eat

notes:
tasty on a bun with ketchup and mustard
a bit stronger flavored eating the meat plain, was fairly mellow/complementary with the bun and condiments

I was trying to emulate the flavor of the nice burger carts in Portland, like the Brunch Box, which often have a subtle flavor to them which marries well with grilled onions and ketchup and mustard. This recipe is close but not exact. Salt, pepper, onion is a good place to start for a burger rub. Depending on what you're looking for, you could take it in other directions with the salt pepper onion base, more chili powder and heat for a southwestern flavor, coriander and dill for Montreal steak flavor, garlic ginger and five spice for asian flavor...
