Grilling over fire

Was thinking about doing a roadside chicken and saw Tony Rs post using the Orange Wood on the grill. I have a lot of sugar maple cut up for fire wood and wanted to try this method on the grill but have only ever used charcoal. Do you treat this like any other fire then let it burn down to embers before putting the grate on to cook over? I assume a few logs would be sufficient, but do you put some hot charcoal under it to keep the logs burning until they break apart? Any advice is appreciated!

I added charcoal briquettes to keep the fire going. After 45 min or so I was able to use my weber spatula and break the log.
 
Roadside chicken with sugar maple? Just makes me wonder if you will say "pass the syrup" after that first bite?
