grilled steak and pineapple

Here is something that I made tonight on the WSM that came out great! Thought I would share it with everyone.

Grilled Rib Eyes with grilled pineapple.

Here's what I did.. I used a modified recipe for a BGE TRex's Strip Steak Method
I used 2" thick ribeyes and prepped them as show on their website.

I got a chimney of coals that blazing and poured them in the charcoal ring and set a grate right on top of the ring.
I then seared the steaks 1 1/2 mins per side. Pulled them, lidded the WSM for 5 mins and then put on the pineapple. I prepped and cooked them as shown here.

After pulling the pineapple I put in the center section, added some mesquite, put in the lower rack and put the steaks back on. Coooked them for 4 1/2 mins per side.

Everything came out great! Excellent steaks and a nice dessert.
 
I tried the grilled pineapple for the first time last night, too. Made a great companion to the chicken tandoori that I did in the smoker.

Next time (and there will definitely be a next time) I would skip the coconut milk. The fruit we had was juicy enough to get a full coat of sugar to adhere.
