I'm new to the board and have had my WSM 18 in for 1 week now. Her first smoke was last Sunday with a Pork But that turned out just wonderful. I'm pretty new at smoking, but have the help of a bro that is in the pro BBQ circuit here in Fla. He was really helpful last weekend. The but was injected and rubbed before sitting overnight, smoked for 2 hours, then wrapped in foil for the remaining 6-7 hours. The following provides a few pictures...
